Paffy, I'll speak for the Univ of Arizona plane. There was a lot of theoretical engineering design that went into the plane before it was built. This design process is more rigorous and traditional than typical ARF designs that we fly for fun. A lot of theory, optimization scripts and codes (Matlab, Vorlax, Fortran, etc) were used to design the plane under a variety of constraints, while still being able to perform the mission/payload/flight profiles of the competition. The fuselages are bulky because of the bulky payloads (a simulated Pitot probe and camera/imaging system) that AIAA requires us to carry. The plane is not designed for looks or superb flying qualities. It is a final compromise based on a variety of contraints. There is even a requirement for it to fit in a certain size box, and the time it takes to get it out of the box and ready it for flight. There is more info buried in here on the requirements: http://www.ae.uiuc.edu/aiaadbf/
