Al, that recipe is dead on, except for the sugar. It's an american thing with brown sugar. It's almost never used in Sweden. The original(i guess gravlax is originally swedish, since it's a Swedish word)recipe would be using regular(white) sugar.

It's usually served with "gravlaxsås"(gravlax gravy), to give it a bit of vinegar taste.

Keep in mind, It's been 20 years since I got out of the chef trade, still those are "classics" that every swedish chef knows by heart..lol.

I haven't made pickled herring for a loong time though, since it's a matter of honor to taste the food before it leaves the kitchen,and like I said, i'd rather jump of a cliff
Bed time now, since I'm actually back in Sweden for a while, before the next trip to gawd knows where.
Tomorrow I'll continue on my new project, a 1/4 scale tiger moth foamie, AUW around 2.5 pounds. It's a fun project, involving some interesting problems, like detachable wings and so on. It'll probably end up in a pile, but at least i'd have fun doing it

Adjonym, I'm not surprised by the sugar. I'm sure the original recipe called for desiccated honey or something as they didn't have sugar available. Still, it's the origin of lox for bagels and lox. I love it!!!

Beleive me... i would give up almost anything to afford to get me and the
Rockin´Scouts to the Nall but the young lads i´m playing with is still stuck in school
