A little more info would help. How many amps were you drawing, what size prop, were you running a seperate receiver battery or a UBEC, what was the ambient temp where you fly?
The HV85 will handle up to 50V so at least we know that it wasn't too many volts on 8s.

If there was sufficient airflow over the ESC then there's no reason it should have burned up. Sounds like you just got a bad one, it happens. Email Castle Creations or call them with the info you gave here. CC is one of the best companies in this hobby when it comes to customer service, I'm sure they'll take care of you right away.

Just spent a week at the Pattern Nats running a Castle 85HV in competition. Pushing over 2000 watts on 10s lipos I never even got the esc hot.

Its possible you have a defective one, but I'd suggest looking very closely at your cooling setup. If you had the esc buried in the fuse and you were 3D'ing the airplane its possible you did not have enough cooling air over the fins of the heatsink.....

I mounted the ESC behind the motor in the cowl . I hope that would be the best place for it for the most air flow ? I just order a 110HV just to make sure I don't have this problem again !

I'd mount it directly behind any airvent you have to mount it in front of and don't forget exit area, which likely needs to be as much as 2 times as big as intake.

ROL, I'd start with low timing on the motor for starters. I'm basing that on the fact that I believe the motor you're running is similar in size and KV to the motor I ran in my pattern plane.

To get the sure scoop, get your motor model # and Kv rating in mind and call Castle's tech support. They'll get you set up.

Good luck!
