its simple really,
Your old bind had the throttle reversed, it will always go to where it was bound. the throttle channel is the only one that does that besides the gear will initialize in its bound state.

you probably had the transmitter too close to the model. set it behind you a few feet away.

You probably did not have a power issue on this one, its likely a swamping issue. I have several posts on the issue. I have seen holds cause this. It is possible you didnt even link it fully. You need to get into the habit of checking for full system connect before firing up.

tx on, wait 10 sec. Rx on. wait......let it link. check the receiver if you can for a solid light. check the controls and go.

When you bind it the next time, just do it by the book, and make sure the throttle is in idle setting you want.

When you are all done binding, power up everything and go full throttle. turn off transmitter and it will go to idle. If it does not, then you didnt have a successful bind.

Binding is so simple. just put the plug in, power the rx, it blinks
hold the bind button and power the transmitter and hold until lights go steady on ALL receivers. Pull the plug and power down. you are done. dont do all that other stuff its a waste. If it wont bind like that, something is wrong.

When you bind, move away from the model about 10 feet or so to do it so to get a clean signal.
