3D planes do not have flaps. The planes in the simulator are marked "3D" to make it easier for users of the sim to identify planes that are set-up to fly 3D. In order to make an aerobatic plane do 3D maneuvers well, you need it to have low wing loading, lots of control, and the center of gravity should be towards the tail. You can edit the aerobatic planes (Yaks, Extras, Edges) that do not say "3D" next to their name to fly 3D just as well by adjusting the parameters I mentioned in the previous sentence.
