Welcome! Getting into giant scale is very exciting, and you'll love the way the bigger planes fly! As far as Extra 300 vs. Yak-54, it's mostly personal preference, but there are some differences. The Extra will be slightly better in IMAC and will be a little smoother, while the Yaks tend to be a tad better for 3D. They will both fly 3D and IMAC very well, these are just small defferences.
As far as the company, there are many good ones out there, and it's hard to find a bad one. Each company has it's strong points, but in my opinion, you won't find a better flying plane than the Extreme Flight Yak-54 and Extra 300. I have had and flown many of their planes, and the quality, and flight performance is by far the best that I've experienced! I am currently flying their 88" Extra 300, and love it! For 3D, it is extremely smooth, and very locked in. In IMAC and all types of precision, it is extremely precise, and feels great all around. Everyone has their own opinion, but for my style, this plane is certainly the best on the market! Here's a video of me flying mine in the Pacific Coast freestyle Championships:
