Though may be the reason for this rudder hard over, do you handle a live rudder while moving the aeroplane, won't it stress servos? or at this scale it doesn't matter as the rudder force is much more than the handling force.

Shouldn't hurt it at all holding the tail - even regular old cheap servos. Shouldn't be any stress on them at all really. But they were merely keeping it under control while the pilot taxied out.
