Hasn't really seemed to be a problem as far as tracking for me, im sure a two spring setup would be better but the single spring setup has worked purty good that I haven't had a reason to change it.

Same here. I put very little tension on it and it works fine. Once you start a takeoff roll the rudder does all the work anyway.

When I move the rudder back and forth the wheel stays stuck until I over extend the rudder in the other position

Don't worry about the tail wheel. It will work just fine with the way you have it set up. and it should hold up fine too.

One little detail I like doing is color matching the control horns to the surface. It adds a nice little touch to it, but is not absolutely necessary.

No problem with the tail wheel George. Had that same set-up on my 30% Yak and when your rolling it turns great..What engine are you putting in your plane. I'm building the same plane right now as well and am putting a dle60 twin in mine.
