I fly helis and airplanes! More so airplanes than helis, but helis are my relief when I get bored with airplanes.

My 700, and also a video of me from the Fly For Tots with it.

Generally, if you intend to learn inverted and 3d later on, it is a good idea to keep all the pitch curves as a straight line going from 0 to 100 or -100 - 100. The idea is to keep the mid stick at zero pitch and two extreme ends to have same pitch except the sign.

Set mid stick pitch to zero deg. Low pitch to -3 deg or so and high pitch to 10deg should be fine.
Set cyclic pitch to about 6deg max for now. Add about -20% expo on elev and aile
Be sure that you have heavy paddle or add some paddle weights (10g) so the cyclic response is slow enough.

Better way to learn to spool down is to settle the bird down (about zero pitch) then hit throttle hold. If you get used to this, then you will not need the -3 on low pitch side and just go straight line pitch curve of -10 0 10deg (default)

Sim is a better way to go. If you can keep it level, I do not see a need for training gear. Practice on the sim until you can settle it down level and you should have no problem with real one.

Flying with skids change flight dynamics and it will feel different when you take them off.
