Just tell those folks asking about the jumping that the plane is just nervous and once it gets in the air the plane always relaxes and flies right. Thats what I do and just flip the prop over a couple of times and start flying.

Your servo is fine. Also, how many volts are you running to it? Anything over exactly 6 volts will make it more evident, so if you are running an unregulated 5 cell nicad or nimh, the initial voltage is as high as 7 volts.
