I used to do this with Sailplanes... but then one day, I had a servo strip out at the field.. new servo in my box.. no way to solder at the field..
so it is prolly the most secure way to do it.. but if you wanna have the ability to change a servo out at the field, you will need to have servos with pre-soldered extensions... or a portable soldering iron and solder, heatshrink etc.
Just for the convienience, (Read: I am lazy lol)... I now go with the connectors and heat shrink....

hmmmm good point , just make sure you get good servos that don't break
