Hey Joe,
Are you doing 3D or just IMAC? If you are just doing IMAC, one servo should be plenty. Hope this helps.

I'm running 1 8711 and it is plenty for 3D and IMAC. Had 2 8611a and I cannot tell the difference between the setup. Fly mostly IMAC but also alot of rolling harriers. Using the AR9100 w/2 A123 packs.

One 8711 will be plenty for the rudder on a 35% plane.

The plane is very easy to fly. It will float similar to a trainer on landing, fly IMAC just fine and yet you can wring it out on 3-D.
I've owned 2 of them

Gotta build them light and MUST put the rudder servo in the tail. The plane comes out very noseheavy when built stock. I took over 12 ounces of wood and hardware from areas forward of the wing tube, installed my rudder servo in the tail, and STILL needed to put my ignition battery at the back of the hatch area and my rx batteries ALLLLLL the way back in the tail to achieve a good 3D balance point, which is only 3/8" aft of their recommemded starting point. Don't let this scare you - just know that you will want everything as far back as possible.
I have had two of these, I love it that much. It is the most wicked 3D plane ever, and is especially great for high-energy aerobatics because they are built to last. IMO, the lighter you can build it the better. If you build it stock and use light batteries (dual 5200 li-ions would be considered extremely heavy, for example, whereas a single A123 2300 would be considered light) you can finish out under or around 27 pounds. Spend a little time with a dremel and a little $ on some CF options and you can easily finish under 26 pounds. My current 260 has: single 8711 on rudder, mounted in the tail 5955's everywhere else dual A123 1100's on rx single A123 1100 on ign. a Fromeco DC-up for extra juice when needed Fromeco Wolverine switch 5245 digi min for throttle AR9000 receiver CF wing and tail tubes CF tailwheel CF main gear TBM CF spinner DA-100 on compact muffs Mejz 27X10TH prop Lightening mods to the fuse and hatch and motor mounting system that saved 12 ounces AUW = 25.7 pounds I absolutely love this plane!!!!!!!

I build mine stock and use (2) 5200 LIONS for mine. I have cans upfront and 2 servos in the tail.
My recent one ended up tail heavy. I moved everything forward of the wingtube and its fine now. I don't know how much the overall weight is and I don't care. It flies just fine the way it is.

Some people don't care about weight. Some do. I have flown heavier versions of this plane and I prefer the lighter option. Yes, the heavier planes fly "just fine", but the lighter ones fly better.
I don't know if it is because of your cannisters or if you have an older version of this plane. They recently changed to a lighter, higher grade of balsa. That is the main reason they come out noseheavy now. With my rx batteries at the back of the hatch area and my ignition in the stock location, the CG was so far forward of even the 3-1/4" starting CG that I couldn't lift the plane without it falling off my fingers.

I think its the servos in the tail. I had the first shipment for my last one with the same motor and cans and it was noseheavy with the servos in a pull/pull. I had to put the batteries just aft of the turtle deck. With the servos on this one its tailheavy with the servos in a push/pull in the tail and my batts are now even with the front of the fuel tank.
I would bet this current one is a first or second run production as well but I have no idea since I got it used. And yes......BW cares about weight. I just care if a plane flys good. I try to keep things light (except I don't skimp on batteries as I prefer the option of redundancy and to fly all weekend without charging). I do have a CF wingtube/tailtubes for this one but I stuck with the Alum landing gear. I think a slightly heavier plane tracks better in IMAC and this is my IMAC backup. Of course that all depends where the weight is and being on the centerline in this plane its ok. I wouldn't want that weight in the wings.
