Default Battery and esc questions

Im looking for information on a few things. A battery 4000mah 14.8v 15c lipo, a motor max continuous current 80amps, max power 1140 watts.

First what does all the 4000mah 15c mean exactly??
what 70amp speed control would work best in this situation??

I recently had a edge 540 with a 3000mah 14.8v battery, with a 40 amp esc catch on fire?? any Idea why? I dont want this to happen again??
Im used to gasers.
