what is this maneuver called? it starts at 4:10. looks like opposing snaps of some sort.

He did something before that was called the snake, dont know if this is just a faster tighter version or what but looks simular

Definately not a snap. It looks like the snake performed on high rates with exaggerated stick movements.

when i've done it (not necesarily well) you ke, roll to one side, hold it there with the elevator, then push it back, and do the reverse...

You're correct. It's a highly exagerated snake. Not too hard to do, but to do it and hold altitude, pretty tough.
