For the ailerons, elevators, and rudder i would use something with about 150-200oz.. my go to for something like your plane would be the HiTec D645... metal gear HV capable popular 25 tooth spline and rite around 180oz. of torque and only 40 bux a shot..
Any particular reason to use the 5565s for light duty stuff? They have basically the same torque as the D645, but are just a tad faster.

No you can use them all over the plane if you like... but they are 65ea thats all.. you can save a few bucks with the D645’s or fit it out with the 5565.. but they are pretty fast so you will have to ad a good amount of expo. Unless you are used to super touchy control surfaces.
