I learned to use peel ply when I was building a Lancair 360. You will also find the West Systems epoxy is easy to use, has a long pot life and sands better that any other epoxy I have used and I have used a bunch. I glassed my 110" KI-43 Oscar with less than a quart of resin. Here are a couple of pictures of a wing panel and the stab with peel ply. After glassing both sides the wing panel took about ten minutes to sand ready for primer.

any of your motor choices worked great. I had one for a bit with a US41 on it and it was pretty sluggish. Someone at our club put a rcgf 60 twin in his and it was really nice power. Good luck and they are pretty neat planes
